Trasimeno carp
The carp, also called “Regina”, has always (as long as man remembers) been a species present in Lake Trasimeno, which is periodically restocked. Strong, slender body, flattened on the sides, covered with large scales. It has a brown back, golden and coppery sides, yellowish belly, and reddish pelvic and anal fins. The average weight is 5 kg, and the length varies from 50 to 60 cm. Excellent, tasty meat.
Fishing techniques: tramaglio (“Regina” nets), fila, tofo, bottata (rarely), giacchio (no longer used). Also used is the bottom fishing line (hooks: m. 3-6; bait: earthworm and polenta). Ground baiting is useful. Up to sizes of a maximum of 2-3 kg, it can be decapitated, drawn, skinned, sliced, and refrigerated. For larger sizes, the fish is drawn and scaled, and then packaged and frozen in a tunnel.
