Cicerchia
The “cicerchia” (grasspea) is a climbing herbaceous plant similar to peas. Today is it rare, but in Umbria it is still used for various soups of ancient tradition. Today the cicerchia is at a risk of extinction, but fortunately it has become the object of a renewed interest by a number of cooks in Umbria and the Marrches.
