Umbrian sausage, in observance of Norcia’s tradition, envisages the use of the meat of an adult “Cinta Senese” pig. It is a firm meat of a lovely dark pink color and with an unmistakable aroma. It is flavored with salt, black pepper, and a special sauce that we will not reveal to you because it is a secret of the “Antica Norcineria”... It is obvious that, for wrapping it, only natural gut is used!
